Veg Masterclass: Potato Fritter with Everything

Recipe by Jeff Bland

500 gm Potato’s (Maris Piper) peeled and quartered
50 grams oat milk
75 grams potato starch
3 whole Eggs
3 egg whites
15 – 50 grams double cream
Salt & Pepper
Clarified butter for cooking

Cook the potato’s in salted water for 15 min
Drain, add milk then mash
Sieve through a drum sieve into a mixing ball
Stir in potato starch
One at a time add the whole eggs
Add egg white lightly beaten
Beat in enough cream till thick Pastry cream texture
Season
Cook in shallow frying pan until golden brown on a moderate heat
Serve straight away with..

Asparagus vinaigrette
Truffle beurre blanc
Soft herbs, tomato and olive
sweetcorn salsa

and many other season items.
