Current Role and Location: Chef/Owner of Taystful, Blairgowrie, Perthshire

 

Career Highlights (tell us 3 or 4 things about your career): Competing at Culinary World Cup Luxembourg 2018 (individual Bronze Medal winner for Chocolate Showpiece), and competing with Scottish Team as Pastry Chef at Culinary Olympics in Stuttgart 2020 (2 team silver medals). Gold and Silver winning filled chocolates at Scottish Culinary Championships 2017. Demonstrating patisserie dish at the Scottish Chefs Conference in November 2019.

 

Favourite dish on your menu at the moment (or most recently eaten if you don’t have a menu):

Pain au Chocolat – appreciating the full process from start to finish, then eating of course!

 

Beyond the stove, what do you do to relax: country walks, visiting family, watching a film or series, massage/spa.

 

Favourite Films: Love Actually, Greatest Showman and Chocolat!

 

Favourite music album: Several Talking Heads albums

 

Favourite Holiday destination: I like a constructive time away from home, so usually I’m advancing skills on a course, for example at the Callebaut Academy, fitting in some family visits at the same time.

 

Favourite Hotel: The ones I used to work at, so many great memories!

 

Favourite Restaurant: Close by, exceptional meals, excellent service, always a warm welcome, the Dalmore Inn, Blairgowrie.

 

Last Supper Dishes (its food heaven with drinks if you wish!):

 

Starter:  Handived Scallops

Main: Perfectly cooked Beef Wellington

Dessert: Cheesecake with Scottish Raspberries
