Career Highlights (tell us 3 or 4 things about your career): Working in Sicily, getting highly recommend at the Scottish hospitality awards for my Italian cooking, becoming runner up for best new restaurant in 2016 after being open for 4 months.
Favourite dish on your menu at the moment (or most recently eaten if you don’t have a menu): Our Ox cheek lasagna or our stuffed braised rabbit with parmesan omelette.
Beyond the stove, what do you do to relax: reading and exercise

Favourite Holiday destination: Anywhere with my wife Claire, so we can spend some time together

Since 2003 I have worked in Paisley and its surrounding areas where I’ve help mentor young chefs
from the local college and continue to do so.
In 2012 I had the privilege to work and open up Mar Hall Hotel Italian restaurant.
Then I moved on to open Caffe Royale in Paisley has the head chef and two years ago I became Chef
owner.
