Alistair Fowlie – Biography

Before I realised I wanted to pursue a culinary career, I graduated from the University of Edinburgh with an honours degree in Economic & Social History.

After completing my degree, I went on to study Culinary Arts at the prestigious New England Culinary Institute in Vermont, USA. I was one of only 4 students in my year to graduate with distinction and I completed internships at two of Scotland’s Finest Hotels, Kinnaird in Perthshire and Inverlochy Castle near Fort William.

After a couple of years at Kinnaird, I secured a position at the Grande Roche Hotel in Paarl.   I spent almost two seasons as Chef de Partie at Grande Roche before taking a Sous Chef position at the Arabella Western Cape Hotel & Spa in Kleinmond and then took my first Executive Chef role at the historic Alphen Hotel in Constantia, Cape Town.  A spell as Head Chef at Pontac Manor and as a Personal Chef in Paarl followed, before circumstances dictated a move back to Scotland.

Once back in Scotland, I became Head Chef at the Mansefield Hotel in Elgin. Having spent close to two years at the Mansefield, I moved again and helped to establish the Harbour Lights Café & Restaurant in Lossiemouth as Head Chef/Company Director. I left the Harbour Lights in September, 2011 and have been Lecturing at Moray College since then.  I now oversee the activity of the fantastic staff and students of the Hospitality Department within the Moray College UHI Hospitality & Tourism Academy (HATA).

My Catering Business, PDS Moray, began in 2014 and is a small, high-end catering company and consultancy providing a bespoke service.  Over the past 6 years, the business has gone from strength to strength and I have built up a reputation as a high-quality, professional catering service.

Due to my role at Moray College UHI, I am heavily involved in teaching and providing opportunities for the next generation of aspiring Chefs and Hospitality Professionals and I would really like to see a major change and positive future in terms of how young people experience and relate to fresh, local, seasonal food.
